Описание: This book brings together the key conclusions and insights from the duALIne project, presenting state-of-the-art research in food sustainability and identifying priority areas for further study. It will provide a valuable resource for researchers, decision-makers and stakeholders in the food industry.
Описание: Nearly every day brings news of another merger or acquisition involving the companies that control our food supply. Just how concentrated has this system become? At almost every key stage of the food system, four firms alone control 40% or more of the market, a level above which these companies have the power to drive up prices for consumers and reduce their rate of innovation. Researchers have identified additional problems resulting from these trends, including negative impacts on the environment, human health, and communities. This book reveals the dominant corporations, from the supermarket to the seed industry, and the extent of their control over markets. It also analyzes the strategies these firms are using to reshape society in order to further increase their power, particularly in terms of their bearing upon the more vulnerable sections of society, such as recent immigrants, ethnic minorities and those of lower socioeconomic status. Yet this study also shows that these trends are not inevitable. Opposed by numerous efforts, from microbreweries to seed saving networks, it explores how such opposition has encouraged the most powerful firms to make small but positive changes.

Описание: Food and drink has been a focal point of modern social theory since the inception of agrarian capitalism and the industrial revolution. From Adam Smith to Mary Douglas, major thinkers have used key concepts like identity, exchange, culture, and class to explain the modern food system. Food, Politics, and Society offers a historical and sociological survey of how these various ideas and the practices that accompany them have shaped our understanding and organization of the production, processing, preparation, serving, and consumption of food and drink in modern societies. Divided into twelve chapters and drawing on a wide range of historical and empirical illustrations, this book provides a concise, informed, and accessible survey of the interaction between social theory and food and drink. It is perfect for courses in a wide range of disciplines.

Many believe that America's food system is in dire need of reform, with concerns ranging from the obesity epidemic to exploitative labor practices and negative environmental impact. This eye-opening book answers provocative questions about what changes are needed, who is advocating the changes, what parties are opposing these changes (and why), and what a new food system would look like. Organized into three sections, the work identifies the problems with the current system, reviews the changing landscape of food policy, and suggests workable solutions for progress.
Washington insider Steve Clapp takes a comprehensive look at the struggle over the future of food. He examines the vision for a reformed national food policy that includes calculating the true cost of food, providing universal access to healthful food, adopting farm policies supporting public health and environmental objectives, improving food safety, paying fair wages to food employees, treating food animals with compassion, and reducing the food system's carbon footprint. The book explores the ways in which these issues can be resolved, drawing upon lessons learned from the early food advocates of the 1960s and 1970s.

Hunger, malnutrition, poor health, and deficient food systems are widespread in Sub-Saharan Africa. While much is known about African food systems and about African health and nutrition, our understanding of the interaction between food systems and health and nutrition is deficient. Moreover, the potential health gains from changes in the food system are frequently overlooked in policy design and implementation. The authors of The African Food System and its Interactions with Human Health and Nutrition examine how public policy and research aimed at the food system and its interaction with human health and nutrition can improve the well-being of Africans and help achieve the United Nations Millennium Development Goals (MDGs). Several of the MDGs focus on health-related challenges: hunger alleviation; maternal, infant, and child mortality; the control of HIV/AIDS, tuberculosis, and malaria; and the provision of safe water and improved sanitation. These challenges are intensified by problems of low agricultural and food system productivity, gender inequity, lack of basic infrastructure, and environmental degradation, all of which have direct and indirect detrimental effects on health, nutrition, and the food system.Reflecting the complexity and multidisciplinary nature of these problems and their solutions, this book features contributions by world-renowned experts in economics, agriculture, health, nutrition, food science, and demography.
